Polenta

I have a similar story from my childhood. My mom used to make makeshift cookies by spreading cake frosting between graham crackers. We kids went crazy over them. A few years ago, we asked mom why she never made them anymore.

She replied indignantly that she only made those when she either didn't have time or money to bake. She was a little upset that we found those cookies to be a highlight of our childhood.

My Grandma would make something she called a "depression cake", for the same reason as in the strip. It was just a simple pineapple upside-down cake of pancake batter poured into a pie-tin pre-lined with pineapple and brown sugar.

We'd insist on it every birthday and holiday,... until she finally decided she had had enough of it after 80 years.

Thanks for reminding me of it. I may have to make one for my wife (a Brooklyn Italian). She'll probably just look at it and say, "Whathahelldayacalldis again?"
